Ingredients

4 6-8 oz salmon filets skin on

2-3 lbs Par boiled potatoes

3/4 lb lump crab

1/3 cup olive oil

Scallions chopped

Coriander chopped rough

oven roasted tomatoes

salt and pepper to taste

Preparation

Heat olive oil in pan. Add potatoes and sear, rough mash with a fork into chunks. fold in crab and scallions and drizzle with olive oil. Adjsut seasonings. Salmon Score salmon on skin side about 3/16ths inches deep. salt and pepper both sides. Heat oil and sear about 4 mintues on skinned side down. Do not move. Flip salmon over and finish cooking about 2-3 minutes. To serve, pile hash in plate, place salmon on top, drizzle olive oil and garnish with roasted tomatoes.
