Ingredients

1 LB Potatoes, peeled & diced

1 LB Leeks, or Onions

3-4 TBS Unsalted Butter

4-6 TBS Heavy Cream

2-4 TBS Minced Chives, and Parsley,

Sliced Radishes for garnish

Salt and Pepper

Preparation

Simmer potatoes, and leeksin salted water,for 40 to 50 min. until soft. Puree vegetables with immersion blender, Add butter bits, then salt & pepper to taste. Stir in cream. Pour into soup bowls & sprinkle on chives,parsley & radishes.
