Ingredients

1 1/2 lb ground turkey

1 large onion, chopped

1 red pepper, chopped in large chunks

1 can yellow corn (mostly drained)

1 can mexican tomatoes (chopped tomatoes with chiles+) with juice

1 lb can tomatoes (torn into pieces) with juice

1 small can medium/hot green chilis

1 lb very thin egg noodles

salt & pepper to taste

Preparation

Using a large non-stick fry pan (or spray a regular pan) with a cover, brown turkey with onion and red pepper. Season with salt and pepper to taste. Add corn, mexican tomatoes, torn tomatoes, chilis, and noodles. Cover and cook until noodles are tender (approx 15-20 minutes). As a extra treat, before serving grate Monterrey Jack cheese over dish. Great with warm bread and fresh salad.
