Ingredients

2 medium Onions diced

6 slices bacon cut in ½ inch pieces

2 pounds Portuguese chorizo sausage cut in ½ inch slices

3 cans 15oz tomato sauce (must be sauce)

1 Tbls each salt -pepper, 2 Tbls of oregano

2 cans 20oz chickpeas drained

2lbs Ditali Pasta cooked al dente

Preparation

  1. Cook pasta al dente according to box directions then drain well & set aside 2. Fry bacon until crisp remove to paper towel to dry 3. In the bacon fat sauté onions for 4-5 minutes or until onions are clear. 3. Add the sauce plus 1 can of water and bring to a boil. 4. Add the chorizo, salt, pepper and oregano then lower heat to a simmer and cook 50 minutes. 5. Drain and rinse chickpeas add to sauce and cook 10 more minutes. 6. Add pasta and bacon. 7. Cook 2 minutes, remove from heat and the gourmet meal is finished.
