Ingredients

1 lb. pork tenderloin or boneless pork chops

Corn starch

2 Tb. Oil

1-2 Tb. Soy sauce

1-2 Tb. Ginger, cut into matchstick strips

1 Tb. Rice wine vinegar

1 lb. long beans or green beans, cut into 2-in pieces

1 tsp. sugar

Preparation

Cut pork into 1/4" x ¼" x 2 in. strips, coat with corn starch and a little bit of salt.

Heat 1 Tb. oil over very high heat in a wok or large non-stick pan until smoking, add pork and stir fry for 1-2 min, until browned. Add soy sauce, ginger and vinegar, then remove from pan.

Add another 1 Tb. oil to pan and keep on high heat, add beans. Cook for 1 min then add ¼ cup water and cover tightly, let cook 3-4 min until beans are tender crisp. Uncover and add a bit of salt and the meat. Stir together with sugar and cook until all water has evaporated.

Season with salt or say sauce to taste and serve over rice.
