Ingredients

Salsa:

2 cups chopped bing cherries

1/3 cup chopped red onions

1/4 cup chopped cilantro

salt to taste

Pork:

4 medium sized pork chops

2 teaspoons black pepper

2 teaspoons minced garlic

3 tablespoons olive oil

Veggie Bed:

3 julienned zucchini (2 green and 1 yellow)

1 teaspoon salt

1 teaspoon pepper

1 tablespoon olive oil

Preparation

Salsa: stir together cherries, onions, cilantro, and salt. let sit.

Pork:

  1. coat skillet with olive oil and bring to medium heat.
  2. rub garlic onto pork chops and sprinkle both sides with salt and pepper.
  3. cook pork chops to liking.

Veggie Bed:

  1. Add olive oil to pan and bring to low heat.
  2. add zucchini and sprinkle salt and pepper over.
  3. cook until zucchini begins to soften and remove from heat.

Place veggies on plate and place one pork chop atop. Spoon salsa over pork chop and serve!
