Ingredients
Salsa:
2 cups chopped bing cherries
1/3 cup chopped red onions
1/4 cup chopped cilantro
salt to taste
Pork:
4 medium sized pork chops
2 teaspoons black pepper
2 teaspoons minced garlic
3 tablespoons olive oil
Veggie Bed:
3 julienned zucchini (2 green and 1 yellow)
1 teaspoon salt
1 teaspoon pepper
1 tablespoon olive oil
Preparation
Salsa: stir together cherries, onions, cilantro, and salt. let sit.
Pork:
- coat skillet with olive oil and bring to medium heat.
- rub garlic onto pork chops and sprinkle both sides with salt and pepper.
- cook pork chops to liking.
Veggie Bed:
- Add olive oil to pan and bring to low heat.
- add zucchini and sprinkle salt and pepper over.
- cook until zucchini begins to soften and remove from heat.
Place veggies on plate and place one pork chop atop. Spoon salsa over pork chop and serve!
