Ingredients

5 potatoes cubed

1 bag of carrots (peeled and sliced)

1 pkg. of center cut pork chops (cut inot bite-size cubes)

1 onion chopped

1 cup of chicken broth

2 tbsp. soy sauce

2 tbsp. olive oil

Preparation

Saute onion in 1 tbsp. of olive oil. Place in slow cooker with potatoes, carrots, and chicken broth, heat on high heat. In saute pan (used for onion) add another tbsp. of olive oil, heat to med-high heat and add pork. Season with soy sauce until meat is cooked through. Add pork to crock pot*. Cover and cook for 5 hours. *Can add 2-3 tbsp. instant tapioca to thicken. Serve as stew or over rice.
