Ingredients

4 x Pork Sausages

1 tin of diced tomatoes

1 medium onion

1 cup basil leaves

2 cups Penne pasta

Parmesan Cheese

Salt & Pepper

Preparation

Dice onion and fry with small amount of olive oil until soft and just brown. Squeeze pork mince from sausage skin. Make into small balls and add to onion. Stir gently until pork starts to get a crunchy surface. Add can of tomatoes. Simmer on low heat for 15 mins. Heat large pan of water. When boiling add pasta, a dash of olive oil and salt. Cook until ready (about 10 mins). Roughly chop basil leaves and add to pork and tomato as you turn off the heat. Allow sauce to rest for 5 mins before serving over the pasta. Add grated parmesan cheese if desired.
