Ingredients

2 Tbs. chopped fresh thyme or

2 tsp.dried thyme

1 TBS. chopped sage or

1 tsp dried sage

2 tsp salt - sea or kosher

1 tsp freshly ground pepper

1/4 tsp ground allspice or clove

2 cloves garlic, minced

Preparation

for a 4-5 lb. pork loin lighly coat meat with a little olive oil and then rub this dry mixture all over the meat. Cover or wrap and keep in refrigerator for a couple of hrs. before roasting. Bring meat to room temp. before roasting or grilling.
