Pastry Ingredients
1 c butter
4tbsp icing sugar
2 C flour
Filling Ingredients
2 c chopped dates
1 1/2 c brown sugar
1 c water
lemon juice to taste
Preparation
Pastry Cut butter into flour. Add sugar. Knead until well blended. Press small amount into the bottom of mini muffin tins to form a tart shell.(Don’t make the bottom too thick) Bake at 350-375 until light brown. Cool slightly before removing from tins.
Filling Simmer all filling ingredients until dates are soft. Stir occassionally. Add lemon juice to taste. Fill tart shells with filling. When cool, ice with a butter icing.
