Ingredients
1-pork tenderloin
marinade;
1/2 cup olive oil
1/2 cup soy sauce
2 cloves garlic, diced
1 small onion, diced
salt & pepper to taste.
For vegetables;
4 med. red potatoes
mushrooms
onions
squash
zucchini
marinade for veggies;
olive oil
white wine vinegar
balsamic vinegar
2 cloves garlic, diced
juice of 1 lemon
Preparation
Marinate pork loin in marinade for 8 hours. mix marinade for veggies slice veggies thick for grilling. pour 3/4 of marinade over veggies. Put in fridge for 3-4 hours. Put pork loin on grill. cook on high on the first side, to get a good crust. Turn after 5-7 minutes. Turn heat to med-low. Add veggies cook until tender crisp. remove veggies & pour remaining marinade over veggies. take off pork loin & let rest for 5 min. Serve w/ veggies.
