Ingredients
3-4 lb Pork Loin
2T Stone Mustard
2T Olive Oil
2T Apricot Preserves
2t Rosemary
2-3 cloves of garlic
3-4T Grand Marnier
14 oz Chicken Broth
1 Medium Onion
1/2c Dried Apricots
Preparation
Pre heat over 375 Sear meat in roasting pan Begin roasting in oven. In the meantime, mix sauce ingredients together. After meat has roast for approximately 30 mins, brush w/sauce. Add Chicken broth, Onions and Apricots to pan. Let roast for approx. 30 more mins or 165-170 internal temp. Remove from pan, let meat rest. Add 1T flour (or to your desired thickness) to drippings, stir for sauce. If too thick, add water. Serve while hot.
