Ingredients
12-16 oz. boneless pork loin chops
2 tablespoons olive oil
2 tangerines
1 tablespoon fresh rosemary
2-3 cloves fresh garlic
1 teaspoon fresh ground pepper
1/2 teaspoon sea salt
8 cherry tomatoes
2-3 small seasonal squash
2 meduim sweet onions
Preparation
Cube pork loin chops. Peel and quarter sweet onions. Cut squash into small rounds or cubes. Mince fresh garlic. Juice tangerines.
For marinade, combine olive oil, tangerine juice, rosemary, garlic, pepper, and salt.
Make skewers. Marinade pork, onion, tomatoes and squash for 2-4 hours. Grill on high heat.
