Ingredients
2 Pork Chops, on the bone
12 oz. Crushed Tomatoes
1/2 cup Fresh Basil, Chopped
1 Clove Garlic
1 Small Onion
16 oz Mozzerella or Provolone Cheese, sliced.
Salt, Pepper, and Red Pepper flakes, to taste
Preparation
Depending on the thickness of the chops, slice 2 or 3 horizontal slits in each. Place 1 tsp of basil and 1 slice of cheese in each opening. Place chops in an at least 2 inch deep nonstick baking pan and set aside. Sautee onion and garlic until onion is translucent. Add tomatoes, salt pepper and red pepper (To taste). Add remaining basil. Top chops with tomatoe mixture and remaining cheese. Bake at 350 degrees for 25-35 minutes, again, depending on the thickness of the chop.
