Ingredients

SALSA

1 1/2 cup chopped pineapple

1/2 chopped sweet onion

2 teaspoons green pepper, finely chopped

1 teaspoon chopped fresh thyme

1 teaspoon white vinegar

1/4 teaspoon salt

PORK RUB

1 tablespoon coriander

3/4 teaspoon salt

1/2 teaspoon pepper

5 pork chops

2 tablespoons olive oil

2 tablespoons rum

Preparation

  1. toss salsa ingredients together in a medium/large bowl and set aside
  2. Rub chops with pork rub mixture
  3. Sautee chops in olive oil (6-10 minutes)
  4. Add salsa and rum to pot, cook for another 5-10 minutes Serve warm
