Ingredients

2 cups pineapple chunks

1 small red onion, halved and thinly sliced

1 jalapeno chile (ribs and seeds removed, for less heat), thinly sliced

2 tablespoon honey

1/2 cup fresh cilantro, chopped

Coarse salt and ground pepper

2 tablespoon vegetable oil, such as safflower

2 bone-in pork loin chops (8 to 10 ounces)

2 teaspoons all-purpose flour

Preparation

  1. In a medium bowl, combine pineapple, onion, jalapeno, honey, and cilantro. Season with salt and pepper; set salsa aside.
  2. In a skillet, heat oil over medium. Season pork with salt and pepper; dust with flour. Cook until browned on both sides and opaque throughout, 3 to 4 minutes per side. Serve pork topped with pineapple salsa.
