Ingredients

8 oz pork tenderloin, cut into half-inch chunks

1/2 tsp chili powder

2 tsp olive oil

1/4 c chopped carrots

1/4 c choppd red onion

1/2 tsp minced garlic

1/2 tsp oregano

1 c canned diced tomatoes with juice

Preparation

  1. Heat oil in a skillet on high for 1 minute. Add pork. Cook until browned, about 1 minute per side. Add carrots, onions, minced garlic, oregano, and salt to taste. Stir for 1 minute. Add diced tomoatoes with juice. Cover and cook, until pork is no longer pink and the juices run clear, about 5 minutes.
