Ingredients

8oz lean pork

8oz uncooked tiger prawns, de-veined

4 spring onion

1 garlic clove

1 tbsp chopped fresh coriander

1 tbsp fish sauce

1 egg

10 slices white bread

3 tbsp sesame seeds

1/4 pint vegetable oil

salt and pepper

Preparation

Put the pork, prawns, spring onions, garlic, coriander, fish sauce, egg and seasoning into a blender. Process for a few minutes until the ingredients blend into a fine paste. spread a thick layer of the paste over the bread right up to the edges. Cut off the crusts and slice each piece of bread into 4 squares or triangles. sprinkle generous amounts of sesame seeds over the top of each slice. heat the oil in a wok. Fry a few pieces of the bread, topping side down first so that the egg sets. for about 2 minutes turn over and cook for a further 1 minute or until golden brown. drain the toasts on paper towels, then serve with sprigs of coriander.
