Ingredients

1 to 1 1/2 kilo lean pork, cut into desired size

3 Tbsp brown sugar

1 level tsp salt ( 1 1/2 level tsp if using Maldon salt)

2 cloves garlic, chopped

2 onions, chopped

3/4 cup white vinegar

1/3 cup soy sauce

a pinch of ground pepper

Preparation

Combine all ingredients in a covered pot. Bring to a boil, then simmer (turn flame to low) for 45 minutes, stirring every 15 minutes. Take off cover, turn flame to medium/high, then continue boiling to reduce the sauce to half. Best served with rice
