Ingredients

2 T butter, melted

3 eggs, lightly beaten

1 c milk

1 cup all purpose flour

1 t salt

Preparation

Preheat oven to 450. Spray the cups of popover pan with cooking spray. Pour ½ t melted butter into each cup. In bowl, whisk eggs and milk, then remaining melted butter. Stir in salt and then whisk in flour, whisking for 2 minutes until smooth. Divide batter among cups, about 2/3 full. Bake for 20 minutes and then reduce oven temperature to 325. Bake another 15 minutes. Do not open oven until done. Remove and invert pan on wire rack. Popovers will slip right out. Serve with butter and/or jam.
