Ingredients
SPREAD
1 cup cooked great northern beans, or canned, no or low salt, drained
1/4 cup Pine Nuts (use Mediterranean stone pine nuts if possible*)
2 tablespoons unsulfured sun dried tomatoes, minced
1 clove garlic
1 teaspoon Dr. Fuhrman’s MatoZest or other no sodium seasoning
1 teaspoon Dr. Fuhrman’s Black Fig Vinegar or balsamic vinegar
1/2 teaspoon minced rosemary, if desired
SANDWICH
4 whole wheat pitas
1 tomato, sliced
1/2 cup thinly sliced red onion
2 cups finely chopped arugula
2 cups finely chopped spinach
1 avocado, pit removed, sliced
Preparation
Combine spread ingredients in a high powdered blender or food processor until smooth.
Toast pitas, slice open a top slit and spread apart. Stuff with sandwich ingredients and spread.
*Mediterranean Stone Pine Nuts have better flavor and higher protein content.
