Ingredients

1 cup sugar

1/3 cup salt

2-3 pounds fresh halibut fillets

Melted butter

Preparation

Add the sugar and salt to a large pot of water and bring to a boil. Cut the halibut into large bite size pieces. Add the chunks of halibut to the boiling water and cook until the fish floats to the top. With a slotted spoon, transfer the halibut to a serving bowl. Keep warm while cooking the rest of the halibut.

Serve with melted butter in individual condiment dishes, and when you dip the fish chunks into the melted butter, it tastes almost like lobster.

It is quick and easy and kids love it.
