Ingredients
5 russet potatoes
3 cups peanut oil, for frying
Preparation
- Peel the potatoes and cut them into 1/4" fries. In a large bowl of cold wate, soak the fries for at least 30 minutes and up to 24 hours.
- Drain the fries well
- In a large deep fryer,heat oil to 325F
- fry the fries in small batches for 406 min per batch. don’t let them brown. Remove the fries to a cookie sheet, spreading them out in a single layer. allow them to cool for at least 30 min.
- Raise the heat of the oil to 375F
- Fry the fries a second time in small batches until they are golden brown.
