Ingredients

3 - 4 ripe pears

1/2 cup water

1/2 cup sugar

Cake

4 eggs

1 cup of buttermilk pancake mix ( or 1 cup white flour and 1 tsp baking soda )

1 cup sugar

1/2 cup polenta

1 cup milk

Preparation

3 - 4 ripe pears stewed in 1/2 cup water with 1/2 cup sugar

Cake: In a large mixing bowl add 4 eggs and 1 cup milk and beat until foamy. Add dry ingredients and mix until incorporated.

Prepare a clay or stone shallow baking dish with butter ( you can melt butter and swish around pan or rub down pan with 2 tbs spoon butter leaving excess in the pan )

Add the fruit and juices evenly to the bottom of the pan, pour over batter and bake 35-45 minutes in a 350 oven until golden brown.

Serve warm with ice cream.
