Ingredients
3 cups mashed butternut squash
1 tbsp olive oil
2 cup cooked polenta
3 cups chopped cooked chicken
2 green onions chopped
1/2 cup fresh cilantro chopped
salt and pepper to taste
4 large poblano peppers
Preparation
cut butternut squash in half, remove seeds brush butternut squash with olive oil and roast in 350 degree oven until soft. let cool and remove and mash pulp mix rest of ingredients through salt and pepper. stuff mixture into seeded poblano peppers(cut in half or left whole with top off) and cook in 350 degree oven until filling brown and peppers soft. (approx 30-40 min)
