Ingredients
1.5 lb. salmon fillet, about 1" thick, in a single piece
1/4 c. mayonnaise
2 tsp. dijon mustard
1 tsp. lemon juice, or to taste
1/4 tsp. grated lemon zest
1 tsp. chopped fresh tarragon
1/4 lemon
Preparation
Sprinkle the fish with kosher salt and pepper to taste. Microwave according to manufacturer’s instructions. Mix the other ingredients well in a small bowl. Taste for seasoning. Squeeze the lemon quarter over the fish. Divide into individual portions. Serve with sauce
