Ingredients

3 cups water

1/2 cup white wine

1 bay leave

dash thyme

1 1/2 lbs halibut

Sauce:

1 cup sour cream

1 tbsp vinegar

3/4 cup finely chopped cucumber

1/4 tsp dill weed

Preparation

Poach the halibut in the water, wine and spices for approximately 10 minutes/inch of thickness.

Combine the sauce ingredients and refrigerate.
