Ingredients
10 fresh apricots; cut in half and remove pit. Trim notch out of top end
2 c water
¾ cup honey
¾ cup sugar
6 cardamom seeds pounds - or ½ t cardamom
2 cinnamon sticks or 1 t. Cinnamon
1 t dried lemon zest or fresh lemon zest or 2t. Lemon juice
8 oz mascarpone
Slivered almonds for garnish
Preparation
Simmer poaching sauce for 15 minutes Strain sauce and return to simmering. Add apricot halves. Simmer covered for 3 - 9 minutes. Ripe really fresh apricots will probably cook very fast. Large New Zealand apricots from Whole Foods took 8-9 minutes. Top each half with a dab of mascarpone and spoon a bit of the poaching sauce over each half. Sprinkle with slivered almonds
