Ingredients

1 lb. bacon

corn kernals (1 bag or 2 boxes frozen or several cobs fresh)

baby lima beans or soy beans (1 bag or 2 boxes frozen)

1-2 red peppers, chopped

1 zucchini, sliced

1 large onion, chopped

Variation: halve the bacon and double the vegetables

Preparation

Cook the bacon until crispy in a large skillet or wok. Crumble the stripes and set aside.

Add the corn, beans, peppers, onions, and zucchini to the skillet and toss in the bacon grease and cook until warm throughout and zucchini is tender.

Add crumbled bacon to mix and serve warm or cool.
