Ingredients
10 pound standing rib of beef (about 4 ribs) vegetable oil
1 Tbs corse salt
1 Tbs flour
2 tsp dried thyme, crumbled
1/4 - 1/2 tsp pepper
Preparation
1 Preheat oven 500 deg. 2 Rub oil on the portion of meat not protected by fat 3 Combine salt, flour, thyme and pepper in bowl and rub onto the roast. 4 Spray pan with Pam. Place meat rib side down in a pan just big enough to hold the roast. 5 Roast for 15 minutes at 500 degrees. 6 Reduce oven temperature to 350 degrees and roast ~15 minutes per pound - approx. 2 1/2 hours for rare center (until 130 F). Let stand 20 minutes before carving.
