Ingredients

1.5 lbs chicken breast cubed

4 mini carrots minced

1/2 Large onion minced

olive oil

rice

chicken stock

1/4 tsp tumeric

1 tsp cumin seeds

1 tsp paprika

salt/pepper

4 cloves garlic minced

Preparation

  1. Saute chicken in olive oil until just about done.
  2. Add carrots, onions, garlic and saute until tender.
  3. Rinse rice and add rice enough to cover meat and vegetables (1 part meat - 1.5 parts rice)(3-4 cups of rice)
  4. Cover rice with broth. Add enough broth to cook rice. (2 cans of broth)Do not stir.
  5. Reduce heat and simmer.
  6. When water goes down, stir until all water is absorbed. Add more water if necessary to cook rice. Taste and season with salt and pepper.
  7. When rice is cooked, remove from heat and let stand for 10-15 minutes). Stir and serve.
