Ingredients
1.5 lbs chicken breast cubed
4 mini carrots minced
1/2 Large onion minced
olive oil
rice
chicken stock
1/4 tsp tumeric
1 tsp cumin seeds
1 tsp paprika
salt/pepper
4 cloves garlic minced
Preparation
- Saute chicken in olive oil until just about done.
- Add carrots, onions, garlic and saute until tender.
- Rinse rice and add rice enough to cover meat and vegetables (1 part meat - 1.5 parts rice)(3-4 cups of rice)
- Cover rice with broth. Add enough broth to cook rice. (2 cans of broth)Do not stir.
- Reduce heat and simmer.
- When water goes down, stir until all water is absorbed. Add more water if necessary to cook rice. Taste and season with salt and pepper.
- When rice is cooked, remove from heat and let stand for 10-15 minutes). Stir and serve.
