Ingredients

Pleasing Pea Platter

Salad

2 cups freshly shelled peas

1 cup snow peas, strings removed

1 cup bean sprouts

3 Tablespoons marinated roasted red peppers, drained and chopped

1 clove garlic, peeled and finely chopped

1 small onion, peeled and cut into thin rings

Dressing

1/3 cup seasoned rice vinegar

1 teaspoon soy sauce

1 teaspoon sesame oil

1 teaspoon granulated sugar, or to taste

1 teaspoon fresh ginger, peeled and finely chopped

1/2 teaspoon salt, or to taste

1/4 teaspoon freshly ground black pepper, or to taste

red and/or green leafy lettuce leaves

Preparation

In a large bowl combine the peas, the snow peas, the bean sprouts, the peppers, the garlic and the onion. Toss to blend.

In a small bowl combine the vinegar, the sauce, the oil, the sugar, the ginger, the salt and the pepper. Whisk to blend.

Pour the dressing over the salad and toss to coat.

Line a small platter with lettuce leaves and mound pea salad in the center.
