Ingredients
2 tps olive oil
2 stalks celery chopped
1 small onion chopped
1 large carrot chopped
2 cloves garlic
5 cups chicken stock
2 greet plantains
6 T fresh cilantro
1tsp cumin
1 bay leaf
salt and pepper
Preparation
saute onions, garlic, celery and carrots. add broth and plantains, cumin bay leaf and half the cilantro. cover and simmer for 49 minutes. scoop out 1 cup of solids and puree. return to soup. add remaining cilantro.
