Ingredients

36 chicken wing pieces

1 tablespoon kosher salt

1 cup cornstarch

Celery sticks

Blue cheese dressing

BBQ sauce

12 ounces of your favorite BBQ sauce (Plan B uses Sweet Baby Ray’s)

3 tablespoons Maker’s Mark Bourbon

Hot wing Sauce

3/4 cup Frank’s Red Hot Sauce

1 teaspoon cayenne pepper

2 teaspoons garlic powder

2 tablespoons butter, melted

Preparation

Preheat oven to 425 degrees. Line two baking sheets with aluminum foil and lightly oil the foil using a pan spray or 2 tablespoons of vegetable oil. If necessary, cut whole chicken wings into two pieces. Tips can be cut off and discarded or used for stock. In a bowl toss the wings with the salt. Place wings in a large bowl or plastic bag, add the cornstarch and toss or shake to coat evenly. Remove wings, shaking off excess starch. Spread evenly on prepared baking sheets. Bake in preheated oven for about 20 minutes, turn wings over and bake an additional 15 minutes. Preheat a deep-fat fryer to 375. Use tongs to carefully lower a few wings at a time into the fryer. Fry until wings are golden and crispy about 6 to 7 minutes. Remove to bowl and pour desired sauce over the wings, toss to coat. Serve with celery sticks and blue cheese dressing. For the sauces: Place all ingredients in a bowl and mix well, pour over wings
