Ingredients

1 Egg Plant sliced 1/4", 2 potato’s sliced 1/8", 2 large onions sliced thin, 2 large cans chopped tomato’s drained. 9 cloves of garlic chopped fine, or pressed.

1 cup olive oil, salt & pepper.

Preparation

Slice egg plant cross ways 1/4" thick. Slice onions in thin rings. Slice potato’s 1/8" thickness. Drain tomato’s. Chop or press Garlic. Layer in a 9 by 13 baking dish Egg plant first. Salt and pepper to taste, pour olive oil evenly and bake stirring about every 1/2 hour.
