Ingredients

2.25 c sifted all-purpose flour

2 tsp baking soda

1 tsp each ground cloves, ginger, cinnamon, salt

.75 c (1.5 sticks) unsalted butter (soft)

1.5 c sugar

1 egg

.25 c molasses

Preparation

Preheat oven to 375-F. Sift flour, baking soda, spices, salt. Beat butter and 1c of sugar until light (about 1 min with stand mixer). Add egg. Add molasses. Mix well. scrape bowl. Add flour and mix just until combined. scrape bowl & mix in. Roll 1-2 tsp of dough into balls. Roll in remaining (.5 c) sugar. Arrange 2-inches apart on parchment lined cookie sheet. Bake until set, 9-10 min. Remove to a rack and cool.
