Ingredients

1 pound pinto beans

6 cups water

1 medium chopped onion

3 slices bacon, diced

salt, pepper, and garlic powder to taste

Preparation

Soak beans overnight. Pour off water and replace with fresh. Bring to boil, cover, reduce heat and simmer 2-3 hours until tender (beans are hard to overcook, just make sure they have enough liquid). Add seasonings during last hour. Beans may also be cooked in a pressure cooker or crock pot following manufacturer’s directions for dried beans.
