Ingredients

1 Extra V Olive Oil

1 large sweet onion, peeled and cut into (1/4 inch slices or finer)

1 large green pepper and 1 red pepper, (seeds removed, cut into 1/4 inch pieces.)

1 tube (13.8 oz.) refrigerated pizza crust

12 shrimp, peeled, devined, and cut into small pieces, or can of small shrimp

1/4 tsp. salt

1/4 tsp. pepper

4 oz. smoked Gouda cheese, shredded

4 oz. cheddar cheese, shredded

Preparation

Heat oven to 425∞. Jet a large nonstick pan over med.-high heat. Add extra V. Olive Oil, onion and green and red pepper.Cook and stir occasionally for 5 min. Set aside. Spray a 16 x 12 cookie pan with nonstick cooking spray. Unroll pizza crust and stretch it to 1 " from edge of baking sheet. Score with pizza cutter, but don’t cut through into the serving piece. Bake 425∞ for 12 min. Remove from oven. Lower temperature. Scatter the onions and peppers over the top Bake 10 min. at 350∞Sprinkle with the shrimp and cheese over pizza. Broil for 1 to 2 min. until heated through and cheese is melted. Cut into serving pieces and serve immediately.
