Ingredients

1 c. marsala wine

2/3 c. raising

4 c. flour

3/4 c. sugar

16 tbsp. unsalted butter, softened

3/4 tsp. kosher salt

1 egg white, beaten til foamy

3/4 c. rough chopped blanched almonds

1/2 c. rough chopped candy citrus

1/4 c. pine nuts

1/4 c. rough chopped candied cherries

Preparation

475F oven. Mix wine and raisins in bowl for 30 min. Combine flour, sugar, butter, salt in large bowl, beat with hand mixer til incorporated, 2-3 min. Add egg white; mix to combine. Stir in raisins and wine, with almonds, citron, pine nuts, cherries. Transfer dough to parchment paper-lined baking sheet; shape dough to 8"x10" rectangle about 1-1/2" thick. Bake til dark brown but moist in center, 35-40 min. Cool 20 min. Cut and serve
