Ingredients
4 pitas
Salad:
1/2 pound feta cheese
1 cucumber
1/2 small onion
1 red bell pepper
2 tomatoes or handful of grape tomatoes
1/2 cup spinach
Optional: olives
White Sauce:
1 1/2 cup lowfat yogurt
1/2 cup reduced fat sour cream
1 tablespoon lemon juice
1 tablespoon olive oil
2 tablespoons cilantro
2 tablespoons scallions
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon cayenne
1/4 teaspoon pepper
Preparation
Salad: Chop cucumber, bell pepper and onions. Add crumbled feta cheese. Slice tomatoes into bite-sized pieces or grape tomatoes in half. Add spinach and mix well.
White sauce: Put ingredients together and mix with a whisk.
Put salad in pita and add white sauce. Serve.
