Ingredients

Boule Dough

3 c. lukewarm water

1 and 1/2 tablespoons granulated yeast

1 and 1/2 tablespoons coarse salt (i use less - tsp rather than tbsp)

6 and 1/2 c. unbleached all-purpose flour

Preparation

Mix ingredients together…no need to knead. Let sit on counter for about 2 hrs, then use or refrigerate.

Pita instuctions Preheat oven with baking stone to 500 degrees. Dust dough with flour and break off a grapefruit-sized piece; divide this into 4 pieces. Roll out and flatten each piece into a 1/8 in thick round. Bake on hot stone for 5-7 miutes, until browned and puffed. Wrap pitas in a clean cotton cloth to keep them soft.
