Ingredients

8 cups water

2 cups green beans, in pieces

3 potatoes, cubed

1 14oz can white beans

1 14oz can red beans

2 zucchini, cubed

3 carrots, sliced

4 cloves garlic (or more, to taste), crushed

4 Tbs chopped fresh basil (or 1Tbs dried basil)

4 big tomatoes (or one 28oz can), chopped

1/2 cup olive oil

1 cup noodles, dry

1 small can tomato paste

grated swiss cheese or cheddar to serve

Preparation

Prep.: 25 minutes (10 min. if you use frozen vegetables) Cooking time: 1:30 hour.

  • Put in large pan or dutch oven: green beans (in pieces), white and red beans, potatoes, carrots, zucchini, tomatoes. Cover with water. Add salt and pepper.
  • Bring to a boil. Simmer for 1 hour.
  • Add noodles, cook for another 15 minutes.
  • During that time, mix basil, tomato paste, olive oil and minced garlic.
  • Add this mixture just before serving.
  • Serve with grated cheese on top.
