Ingredients
1/2 lb butter softened
1 C sugar
1 egg
1/8 t salt
2/3 C pistachios chopped
2 C flour
1/3-2/3 C raspberry jam (not preserves)
Preparation
Preheat oven to 350. Combine butter, sugar and egg. Beat until thoroughly blended. Stir in flour and salt. Spread 1/2 of mixture into 9x9 pan. Bake 10 minutes. Spread jam on crust to within 1/2 inch of edge. Add pistachios to remaining dough. Drop rounded spoonfuls of dough over jam. Bake 35 minutes until golden.
