Ingredients
1/2 cup self-raising flour
1/2 cup plain flour
1 cup rolled oats
2/3 cup shredded coconut
2/3 cup,firmly packed brown sugar
1/4 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/3 cup sultanas
1/2 cup crystallised ginger
1/2 cup pistachios
150g butter, melted
1 egg, lightly whisked
Preparation
Preheat oven to 180C Line slice tin Blitz sultanas, ginger and pistachios in food processor until finely chopped Add other dry ingredients and blitz until combined Add egg and blitz until combined Then add butter and blitz until all combined Press into tray Bake for 20 mins or until brown on top Cool in tray Cut into small squares
