Ingredients

1-2 Lbs Skinless Boneless Chicken

2 Large Eggs

1-2 Cups Bread Crumbs

Hot, Hot, Hot Sauce

Preparation

Clean chicken. Beat two eggs in a small bowl. Dip chicken in eggs and place chicken directly into bread crumbs. Pat chicken with fork or fingers to stick bread crumbs to chicken. Heat oil in a large skillet. Place breaded chicken in hot oil and fry until each side is golden. Be sure not to crowd. Remove chicken from skillet and sprinkle with lots of hot sauce. Place in a 400 degree oven and bake for 20 minutes. Serve with homemade sweeet potato fries and generous amount of blue cheese dressing.
