Ingredients
1 cup diced plum tomato
1/2 cup diced yellow bell pepper
1/4 cup minced fresh cilantro
1/4 cup minced seeded jalapeno pepper
2 tbsp. lime juice
2 tsp. olive oil
1/8 tsp. freshly ground black pepper
1 (15 ounce) can pinto beans (drained and rinsed)
Preparation
Combine all ingredients in large bowl, stir well. May be made 1 day in advance, keep refrigerated until ready to serve (better the next day).
