Ingredients

2 Tbs oil

1 Medium yellow onion halved

1 Poblano chile

1 Lb pinto beans

Water to cover

Salt and pepper to taste

Hot pepper if spiciness is desired

Preparation

  1. Burn onion and chile in oil (add hot pepper at this point).

  2. Add beans

  3. Cover with water, add salt and pepper and bring to boil.

  4. Simmer until beans are soft enough to eat (1-2 hours)
