Ingredients

3 Cups of Pinto beans

1 Lbs of fried, chopped bacon

1 1/2 pounds of coarse ground beef

1 buncn of chopped cilantro

1 large chopped yellow onion

2 seeded and diced jalapeno’s

2 teaspoons cayane pepper

2 teaspoons paprika

1 teaspoon chili powder

3 Tablespoons diced garlic

1 whole cone of piloncillo

1 cup of bourbon

8 cups of water

2 cups of finely graded mozzeralla, or mexican quesodilla cheese

Preparation

In a 6 quart dutch oven or heavey sauce pan saute bacon, and ground beef together when bacon starts to crisp. Add dry seasonings, onion, diced garlic, seeded and diced jalapeno’s. Saute until onions become clear and glossy. Then add bourbon to deglaze the bottom of pan. pour in water. Bring to a boil, add chopped cilantro, then simmer for 2 hours. covered. When serving add finely graded cheese on top
