Ingredients
1 pineapple, peeled, cored and roughly chopped
1 small to medium jicama, cut into matchsticks
4 T. unseasoned rice wine vinegar
1/2 to 1 T. red pepper flakes (to taste)
2-3 T. chopped fresh cilanto
Preparation
Mix pineapple, jicama, pepper flakes and cilantro. Pour vinegar over, combine well and refrigerate for a couple of hours to blend flavors.
