Ingredients
Fritters
1/2 cup Panko Bread Crumbs
1/4 cup Graham Cracker Crumbs
1/2 teaspoon Cinnamon
8 ea. Pineapple Slices
2 Tablespoons Flour
1 ea. Egg beaten with 1 T water
3/4 cup Sugar
Coulis
1 cup Mango-sliced
1/2 cup Sugar
1 Tablespoon Lemon Juice
1 Tablespoon Ginger-minced
Preparation
Coulis
Puree and Strain Mango with Ginger
Add Sugar and Lemon Juice.
Add more/less juice to gain correct consistency.
Fritters
Mix Panko, Graham crumbs, and cinnamon. Dip Pineappple slices into flour, then the eggs, and the Panko mixture. Fry in 350 degree oil until golden brown. Sprinkle with Sugar and serve with the Mango-Coulis
